Protein Shake Mix Pancakes

Where I Get my Protein Shake Mix

Kind of a  damp, lazy  morning..so why not have a hot breakfast..sounded good to me! Since I wanted something healthy and gluten free..I decided to do pancakes and add a full serving of protein shake mix..  I usually don’t measure (much)..but tried so I would have an actual recipe to write here..

  1. Squash bananas
  2. Add 3 Scoops of Vanilla Protein Shake Mix
  3. Add 2 eggs.
  4. Add 1 tsp of xanthum gum  (optional)
  5. Add 2 tsps. cinnamon
  6. Add 1 tsp vanilla
  7. 1/3 cup of almond milk

Stir together..batter will be not be smooth.   Cook over medium heat until brown and then flip and do the other side.. I prefer a firmer pancake so use the xanthum gum as a thickener  and find that cooking smaller pancakes help them remain firm.

I served them with agave and did a crossword puzzle-a Perfect Morning!

Breakfast is done  and 20 gms of vegan protein from the shake mix..

Anyone wishing for  vegan option, could use egg substitute..

This are so tasty and you can put in whatever you like.–chocolate chips would be yummy!
